Here you’ll find answers to the questions we get asked the most about our private sushi catering services.

Is the fish Sushi-Grade?

Yes. And no. I use only the highest quality, and freshest fish and shrimp as possible, sourced trusted local markets.

However, there really is no such thing as “sushi-grade” as you can read in this Serious Eats article.

Please note, there is ALWAYS a risk when eating raw fish. I do my best to not only buy fish from trusted sources, but I inspect the fish before and while preparing it for consumption. Additionally, I also am very careful to keep everything clean and away from cross contamination.

 

How many rolls will we get?

The number of rolls depends on the amount of people as well as the “mood” of the event. Everything is always free-flowing. But, in general, there are usually 8 – 20 rolls for groups ranging from 2 – 8 persons.

Please note: the rolls I make are what are commonly known as “specialty rolls” at most restaurants, meaning they’re quite sizeable and filled/topped with multiple ingredients. Unless requested, I seldom roll “ordinary rolls” such as a tuna roll or salmon roll.

If I roll an “ordinary roll,” you can bet there will be lots of goodies and other fish complimenting it. Please see my menu for examples of some of the rolls I create. And rest assured, you and your guests will be full at the end of the event!

What happens if we're still hungry?

My goal is to leave you in a sushi coma, so no worries…  If you’re still hungry as the event is drawing to a close, and I still have enough ingredients – I will keep rolling until I can’t!

Keep in mind that I do have limited ingredients, so some rolls may not be available as the event draws to it’s conclusion. I will roll what I can with what I have smile

Is alcohol available?

I don’t, unfortuantely, serve alcohol with the meal. However, I can recommend some good sake, and I have the servingware for it (decanter and sake cups) which I can bring is you’re intersted in having sake.

What if we need to cancel?

No worries! I understand that life happens. Depending on how far in advance you cancel will determine what happens.

For the most part, I purchase the fish & vegetables the night before or the day of the event. And I make the rice the day of.

If the food is purchased, I will refund your money less the cost of ingredients made/purchased.

Additionally, depending on how short the notice is, I reserve the right to charge a small cancelation fee in addition to the cost of food.

Do you supply the plates/chopsticks etc?

You worry about your appetite and having a great time and I will bring serving plates as well as sushi plates, dipping bowls, chopsticks, soy sauce, wasabi, ginger, etc.

You will need to provide non-sake drinking glasses and napkins as well as silverware for anyone who doesn’t use chopsticks.
